I can't find a GRO entry for the birth of Ellen
DOLEMAN around 1846.
I checked the 1851 census original and she is definitely described as being '5'.
However, I see that in 1861, she was younger than Albert.
I therefore guess that she must be this entry below, and that her age was wrongly recorded in the 1851 census:

I will therefore amend what I said before, and suggest that the marriage for George and Eliza must have been around 1847.
However, I now can't find a GRO birth record for Alfred DOLMAN, and we also don't seem to have him in 1851. Hmmm, interesting!
I will ponder further.

behalf, and have carried out the following work:
1) Census entry:
I see that the census entry has him as Alfred, but in your first email,
However, we still failed to find a GRO birth entry for him around 1848.

I therefore think that we have found the George you were looking for, so we
didn't bother searching further for him in Chippenham.

From this, it would therefore appear that your Albert & Ellen were not
baptised in the obvious parish churches.
If they were baptised at all, it may have been in a non-conformist Chapel.
Let me have your thoughts on this, and whether you want any more searching
done.
4) Marriage search
Trying to find the marriage of George DOLMAN to Elizabeth (nee BRISTOW),
prior to first child.
Given that we haven't found a child in (2) to pin this couple down further,
I'm not sure whether the Registrar will be able to help, but I can at least
try. I'll make contact with them as soon as I get a convenient moment, and
let you know how I get on.
I have a feeling that George can't be the George Elms(Elias) Dolman(Son of Thomas Dolman and Anne Elms).
I have a record of his baptism for 24/12/1826 in Bremhill. However in the 1861 census George son of Thomas and Ann is 16 years old and in the 1851 census he is 6. This suggests that the original George must/may have died. Therefore I don't think that this is the right George. My feeling is that it is the George that is the son of James and Anne. THere are a number of Dolmans from Calne & Chippenham who ended up as non-conformists, so this could be a line of investigation.

Thanks for your email.
2) Registrar
I have been able to contact the Chippenham Registrar about your missing
entries, ie:
- Baptism for Alfred DOLMAN, c.1848
- Marriage for George DOLMAN, c.1847
They report that they have checked their records for both of these entries,but have failed to find any trace of either.
We therefore feel that these records must have slipped through the net somewhere, or never got recorded in the first place.
I believe that the entry for Ellen in 1851 should be that she was 5 months old not 5 years.
I cannot offer an explanation for where Alfred was in 1851.
